Chicken & mango salad

Method

  • Combine the mayonnaise, sour cream, lime juice and coriander. 
  • In another bowl, gently toss the tomatoes, mangoes, lettuce, chicken, spring onions and chillies with the mayo to taste.
  • To serve, place the grilled flatbread on individual plates and mound the salad on top with a sprinkling of the mayonnaise.

Ingredients

  • 6 heaped tbsp mayonnaise
  • 2 heaped tbsp sour cream
  • juice of 2 limes
  • 2 tbsp chopped fresh coriander
  • 8 cherry tomatoes, halved
  • 2 mangoes, cubed
  • ½ iceberg lettuce, cored & shredded
  • 1 bought BBQ chicken, skin removed & shredded
  • 1-2 spring (green) onions, sliced
  • 2 small red chillies, seeded & sliced
  • pita bread, grilled
