Glamorgan cheese patties with me Mum's tomato sauce


  • Place 150 gm chopped onions with the tomatoes, sugar, vinegar, apples, cloves, allspice, 1 tspn salt flakes and the sambel in a large heavy-bottomed pot. Mix well, bring to the boil, turn the heat down and simmer for about 1-1¼ hours until thick and fragrant, stirring regularly.
  • Then heat 1 tbsp oil in a large non-stick pan and gently saute 1 large onion with the leeks until browned a little.
  • Combine the cheese with just over ½ cup breadcrumbs, the egg, seasonings, mustard and parsley. Then add the sautéed leeks and onions and mix together really well.
  • In another bowl, combine about another ½ cup breadcrumbs with the parmesan.
  • Form the leek mixture into patties. Then carefully crumb them, individually, and shallow fry in a thin layer of hot oil. Drain well on kitchen paper towels.
  • Place the patties on individual plates and serve with a dollop of the tomato sauce on the side.

  • 1 scant tspn ground cloves

  • 1 heaped tspn sambel oelek (or any chilli paste)
  • olive oil
  • 1 large onion, chopped
  • 2 leeks, sliced
  • 1 cup grated tasty cheese 
  • packet breadcrumbs
  • 1 egg
  • 1 heaped tspn Dijon mustard
  • 2 tbsp freshly chopped parsley
  • ¼ cup freshly grated parmesan
