Abalone with shiitakes, snowpeas & garlic


  • Soak the shiitakes in warm water for about 20 mins. Then drain well, discard the stems and finely slice the caps.
  • Remove abalones from the shells, clean and wash in cold water. Then drain well, finely slice and toss in the lemon juice and 1-2 tbsp oil. Set aside to marinate for a few minutes.
  • When ready, heat 1 tbsp fresh oil in a very hot wok (or large non-stick pan) until smoking. Then toss in the garlic, shiitakes, abalone and soy. Cook briefly, season and toss with the rocket.


  • 6-8 shiitake mushrooms
  • 2-4 large abalone
  • juice of 1 lemon
  • olive oil
  • 2 garlic cloves, crushed
  • 8 snowpeas, shredded
  • a splash of soy sauce
  • freshly ground pepper
  • 1 large handful wild rocket leaves
