Baby back ribs with Cola sauce

  • Preheat a kettle BBQ.
  • Then place the potatoes and corn cobs, individually, on lightly oiled squares of foil. Season, wrap up and cook in the centre of the covered BBQ.
  • To make the sauce, place the Cola, BBQ sauce, sweet chilli sauce, vinegar, Worcestershire and sambel with a good grinding of pepper and the garlic in a small heavy-bottomed pot. Whisk up and bring to the boil. Then turn the heat down and simmer for about 20 mins.
  • Place the ribs in the centre of the BBQ and cook for about 15 mins. Then generously brush with the sauce and cook for another 20 mins or so, basting and turning now and again.
  • To serve, place a potato, a corn cob and ribs on individual plates. Then cut a cross in the top of each potato and place a dollop of sour cream and a sprinkling of chives on top.
