Gingerbread men


  • Preheat oven to 160°C fan forced (180°C normal).
  • Cream the butter and sugar using an electric mixer. Then add the egg yolk and mix well.
  • In another bowl, using a wooden spoon, combine the flour, ginger and bicarb.
  • Then add the flour mixture to the creamed butter, little by little, mixing well between each addition.
  • Heat the golden syrup in a small heavy-bottomed pot until runny and add to the biscuit mixture. Combine well and then turn out onto a floured workbench.
  • Roll the dough out to about 3 mm thickness and cut into gingerbread men shapes using a biscuit cutter. Arrange the currants in the positions of eyes and belly buttons and place on lightly oiled baking trays. Then cook in the oven for 10-12 mins until golden. Allow to cool on trays before serving.

  • 50 ml golden syrup
