Fancy mushrooms on toast

Method

  • Preheat oven to 200°C fan forced (220°C normal).
  • Mix together the butter, thyme, garlic, mustard and a squeeze of lemon juice.
  • Then place the mushrooms in an oven tray, flat side down. Squeeze lemon juice over, place a dollop of the butter on top of each mushroom and season. Cook on the top shelf of the oven for about 10 mins until tender.
  • When the mushrooms are almost ready, generously smear one side of each slice of bread with the butter, place in another oven tray and cook on the bottom shelf of the oven until golden brown.
  • To serve, place a piece of toast on individual plates and top with the mushrooms and a sprinkling of parsley.

  • 100 gm unsalted butter, softened
  • 1 tbsp choppped fresh thyme
  • 1 large garlic clove, crushed
  • 1 heaped tspn Dijon mustard
  • 1 lemon
  • 8 medium flat mushrooms, peeled & stalks removed
  • sea salt & freshly ground pepper
  • 4 thickish slices country-style bread
  • 2 tbsp chopped fresh parsley
