Fajita Nachos


  • Preheat oven to 180°-190°C fan forced (200°-210°C normal).
  • Fry the tortillas in a thin layer of hot oil until crispy. Then drain well on kitchen paper towels and set aside.
  • To make the salsa, combine the tomatoes, onion and chillies with the juice of 2 limes, 2-3 tbsp oil, salt and 2 tbsp chopped coriander. Taste for seasoning.
  • Then spread the tortillas with refried beans and sprinkle with the BBQ sauce and cheese. Place on a baking sheet and cook in the oven until cheese is golden and melted.
  • To make guacamole, combine the avocado with the remaining coriander and lime juice, half of the salsa, Tabasco to taste and salt. Taste for seasoning.
  • To serve, cut the tortillas into wedges and top with the salsa, guacamole and sour cream.

  • 2 avocadoes, coarsely mashed
  • Tabasco
  • sour cream
