Molly cake


  • Preheat oven to 150°-160°C fan forced (170°-180°C normal).
  • Place the dates and water in a heavy-bottomed, and bring to the boil.
  • At the same time, sieve the plain flour, baking powder and mixed spice into a large bowl. Add the wholemeal flour, ground almonds and dried fruit. Then mix well with a wooden spoon. 
  • Lightly oil a loaf tin and line with baking paper.
  • Then add the orange juice and boiled dates to the cake mixture. Mix well and then put in a loaf tin, pushing it down into the corners and cutting off paper edges.
  • Cook the cake in the oven for about 45-50 mins until a skewer comes out clean. Allow the cake to cool on a rack, before slicing and serving with a nice cup of tea.

  • 3 tspn baking powder

  • 50 gm ground almonds
