Pasta with seared salmon, rocket & capers


  • Cook the pasta in plenty of lightly salted, boiling water until al dente.
  • At the same time, sear the salmon on all sides in a little oil. 
  • Then gently heat the chillies, garlic, 4-5 tbsp oil and the lemon zest with the salmon cooking oil in a small heavy-bottomed pot. 
  • Toss the rocket, capers and flaked salmon with the drained pasta and the heated oil in a large bowl. Season, mound in individual bowls and serve with a little grated parmesan on top.


  • 1 packet angel curls pasta (or any other type)
  • salt & freshly ground pepper
  • 2 x 180 gm salmon steaks, skin removed
  • olive oil
  • 2 small red chillies, seeded & finely chopped
  • 2 garlic cloves, finely chopped
  • grated rind of 1 lemon
  • 2 handfuls baby rocket leaves
  • 2 tspn capers, drained
  • freshly grated parmesan
