Grilled pork fillet with sage, lemon & prosciutto


  • Whiz up 3 tbsp chopped sage leaves with the lemon zest, juice and prosciutto in a food processor until a paste is formed.
  • Cut the pork fillets lengthways down the centre, but not all the way through. Flatten out a bit with a steak hammer and make deepish slashes crossways. Then generously rub in the paste. 
  • Lightly oil a ridged grill (or BBQ) and cook the fillets, paste down first, sprinkling with a little lemon juice as you do so.
  • Then place the fillets on individual plates and put the butter and a few sage leaves on top with a sprinkling of lemon juice and pepper.
  • Serve with sautéed potatoes and/or a simple green salad on the side.

  • grated rind & juice of 2 lemons
  • 3-4 slices prosciutto, rind removed & broken up into pieces
  • 4 pork fillets, trimmed well
  • olive oil spray
  • extra lemons for cooking & serving
  • little dobs of butter (optional)
  • freshly ground pepper
