Salt & pepper squid


  • Clean and cut each squid body into 4-6 pieces, leaving the tentacles whole. Then wash and pat dry with kitchen paper towels.
  • Mix the flour and seasonings in a large bowl. Tthen toss in the squid and shake off any excess flour.
  • Preheat oil to 180°-190°C and fry the floured squid until golden brown. Drain well on paper towels and transfer to a bowl.
  • Add the spring onions, garlic and chillies. Toss well and serve with lemon wedges on the side.

  • 1/3 cup plain flour
  • 1 tbsp sea salt
  • 1 tbsp ground Szechuan pepper
  • 4 cups vegetable oil
  • 2-3 spring (green) onions, finely chopped
  • 1-2 garlic cloves, finely chopped
  • 2 small red chillies, finely sliced
  • 1 lemon, cut into wedges
