Parmesan & herb crumbed chicken Caesar
Method
- Mix together the mayonnaise, sour cream, anchovies and a pinch of chopped parsley with enough hot water to form a dressing consistency.
- In another bowl, mix together the breadcrumbs, 1/4 cup parmesan and a little parsley.
- Place the seasoned flour in another bowl and the eggs mixed with milk in another.
- Lightly coat the chicken strips with flour, dip in the egg wash and then crumb. Heat an even layer of oil in a large non-stick pan and fry the chicken all over. Drain well on kitchen paper towels.
- Then fry the prosciutto until crispy.
- To serve, arrange the lettuce leaves on individual plates. Sprinkle the dressing and a little parmesan over and top with the chicken and prosciutto, a dollop of the dressing and a sprinkling of parsley.

- 6 tbsp mayonnaise
- 3 tbsp sour cream
- 4-5 anchovies, finely chopped
- chopped fresh parsley
- a little hot water
- 3/4 cup packet breadcrumbs
- ½ cup freshly grated parmesan
- 1 cup plain flour
- sea salt & freshly ground pepper
- 2-3 eggs
- ½ cup milk
- 3 skinless chicken breast, cut into strips
- olive oil
- 6-8 thin slices prosciutto
- inner leaves of 1-2 cos lettuces
