Cos lettuce & crispy prosciutto salad with Ranch dressing


  • To make the dressing, place the mayonnaise, sour cream, buttermilk, Tabasco, Worcestershire, 3 tbsp parmesan and anchovies in a bowl and mix well, adding more buttermilk and a little warm water to reach sauce consistency. Taste for seasoning and set aside.
  • Then heat the oil in a large pan and fry the prosciutto until crispy. Drain well on kitchen paper towels.
  • To serve, arrange the lettuce leaves on individual plates and then sprinkle with the dressing, a little more parmesan, the croutons and prosciutto. Top with more lettuce, croutons, prosciutto, another sprinkling of dressing and more parmesan.


  • 4 heaped tbsp mayonnaise

  • 2 tbsp buttermilk
  • a splash of Tabasco
  • a splash of Worcestershire sauce
  • freshly grated parmesan
  • 3-4 anchovies, finely chopped
  • 1 tbsp olive oil
  • 8 prosciutto slices
  • inner leaves of 1 cos lettuce
  • homemade croutons
