Baby back pork ribs with sherry vinegar & Golden Syrup glaze


  • Preheat oven to 210°-220°C.
  • Simmer the pork ribs in boiling water for 20 mins. Drain well and place in a heavy-bottomed baking tray.
  • Whisk together the oil, vinegar, Golden Syrup, seasonings, garlic and sambel. Then pour the sauce over the ribs, toss well and cook in the oven for 30-40 mins until glazed, turning every now and again.
  • Serve with a simple green salad on the side, finger bowls and plenty of towels.


  • 1 kg pork ribs, cut individually
  • 6 tbsp olive oil
  • 6 tbsp sherry (or red wine) vinegar
  • 6 tbsp Golden Syrup
  • freshly ground salt & pepper
  • 2 garlic cloves, crushed
  • 2 tspn sambel oelek (or any chilli paste)
