Prawn & cheese crepes


  • Place the flour in a large bowl, make a well in the centre and add the eggs. Mix well using a wooden spoon and then add the milk, salt and sugar. Whisk well until smooth and set aside for 1 hour. 
  • When ready, preheat oven to 200°C.
  • Melt the butter in a crepe (or medium non-stick) pan, spoon in small ladles of the mixture and cook crepes on both sides.
  • Lay each crepe on a workbench and cook the remaining crepes. 
  • Then lay the crepes, one at a time, in a gratin dish (or casserole). Place 3 prawns in the centre, top with a little cheese and cream. Roll up and continue the process with the remaining ingredients, forming one layer of crepes.
  • Top with more cheese and cream and cook in the oven until golden brown.
  • Serve with a simple green salad on the side.
