Salmon & cheese triangles

Method

  • Preheat oven to 200°-210°C.
  • Mix together the salmon, mashed potato, parsley, mayonnaise and seasonings until reasonably smooth.
  • Cut each pastry sheet into 4 and place on a lightly oiled baking tray (or trays).
  • Then put a spoon of mixture in the centre of each piece of pastry, top with cheese and fold over to form a triangle. Press down the sides with a fork and repeat the process with the remaining pastry.
  • Beat the egg and milk, and brush the top of each triangle. Then cook in the oven for 8-10 mins until risen and golden.

  • ¼ cup mashed potato
  • 1 tbsp freshly chopped parsley
  • 1 heaped tbsp mayonnaise
  • freshly ground salt & pepper
  • 2 frozen puff pastry sheets
  • olive oil spray
  • grated tasty cheese
  • 1 egg
  • ¼ cup milk
