Cheese, eggs & toast


  • Melt the butter in a small heavy-bottomed pot. Add the flour and gently cook for a few minutes, continually stirring with a wooden spoon. Turn the heat down, add the hot milk all at once and whisk well for a few minutes, adding more cold milk if needed. 
  • Then turn the heat off and add the eggs, cheese and seasonings. Whisk well until the cheese has melted and taste for seasoning. 
  • When the mixture has reached sauce consistency, stir in the parsley.
  • In the meantime, grill or toast the bread and then cut into fingers.
  • Spoon the egg mixture into a bowl, place on a serving plate and arrange the toast around.

  • 3-4 duck eggs (or 2 goose eggs, or 6 normal eggs, or a mixture), beaten
  • ¾-1 cup grated tasty cheese
  • freshly ground salt & pepper
  • 1 tbsp freshly chopped parsley
  • 4 thick slices of country-style bread
