Walnut Palmier sandwich

Method

  • Preheat oven to 195°C.
  • Place the pastry sheet on a lightly floured work bench.
  • Mix together the egg and milk, and brush the pastry edges with this egg wash.
  • Sprinkle walnut pieces and sugar over the top, leaving an edge. Then gently roll a rolling pin over the top and fold both pastry edges into the middle lengthways.
  • Brush the top with a little more egg wash and again fold in half lengthways.
  • Cut into even slices and place on a lightly oiled baking tray, cut side down. Flatten out a little with rolling pin, lightly brush with egg wash and cook in the oven for about 15 mins until golden.
  • Serve warm as is or with a dollop of ice cream in between two palmiers, making a sandwich.

  • plain flour
  • 1 egg
  • ¼ cup milk
  • 1-1¼ cups walnut pieces, finely chopped
  • 1 tbsp caster sugar
  • cooking oil spray
  • icing sugar
  • vanilla ice cream
