Turkish 'spring rolls'

Method

  • Preheat oven to 175°-180°C.
  • Place the feta, mint, dates and egg in a large bowl and mash with a fork.
  • Brush one pastry half with melted butter and then fold in half lengthways. Brush again with butter and place a heaped teaspoon of the filling at one end. Tightly roll up, turning the edges in about half way through rolling. Repeat the process with the remaining pastry and mixture.  
  • Brush the 'spring rolls' with more melted butter and place on a baking sheet. Sprinkle with ground pepper and cook in the oven for about 20 mins until crisp and golden.

  • 200 gm feta cheese, crumbled
  • 2 tbsp freshly chopped mint
  • 4 dates, pitted & finely chopped
  • 1 egg, beaten
  • 6 filo pastry sheets, cut in half lengthways
  • melted unsalted butter
  • freshly ground pepper
