Grilled pineapple with Golden Syrup & brandy butter


  • Whisk ½ cup Golden Syrup with the lime juice, lemon zest and orange flower water in a large bowl.
  • Thickly slice the pineapples and remove skin and cores. Then toss in the Golden Syrup mixture, cover with clingwrap and set aside for up to 2 hours.
  • To make brandy butter, place the milk, custard powder, 4 tbsp Golden Syrup, the brandy, butter and sugar in a small pot. Bring to the boil and whisk until smooth and thick.
  • Then grill or BBQ the pineapple until golden brown, brushing with the marinade as you do so.
  • To serve, spoon the brandy butter in the centre of individual plates, top with pineapple rings and drizzle with a little cream.
