Tagine of pork chops with spiced apples


  • Heat the oil in a non-stick pan and gently saute the onions until soft and tender.
  • Then place the chops in the bottom of a tagine (or casserole) in one layer. Top with the onions and apples and sprinkle with the spice mix, lemon juice, honey and seasonings. Pour stock around the edges, cover and bring to the boil. Turn the heat down and gently simmer for about 40 mins.
  • Serve garnished with a sprinkling of parsley on top.


  • 1 tbsp olive oil
  • 2 onions, finely sliced
  • 4 pork chops, well trimmed3
  • -4 Granny Smith apples, peeled, cored & cut into wedges
  • 1 heaped tspn Middle Eastern spice mix
  • juice of ½ lemon
  • 2 tbsp honey
  • freshly ground salt & pepper
  • about ¼ cup chicken stock
  • 1 tbsp freshly chopped parsley
