Baked fish with garlicky crumbs


  • Preheat oven to 210°C.
  • Gently melt the butter in a pot with the garlic. 
  • Mix together the breadcrumbs, parsley, basil and seasonings. Then add most of the melted butter mixture and mix well.
  • Place the fish in a lightly oiled large pan that can go into the oven (or an oven tray). Season well, sprinkle the herb mixture on top and press down. Then drizzle a little more melted butter on top and cook in the oven for 8-10 mins, checking if ready by making a small cut with a knife.
  • Serve with a simple green salad on the side.


  • 100 gm butter
  • 2 garlic cloves, crushed
  • breadcrumbs made from ½ loaf day-old country-style bread, crusts removed
  • 1½ tbsp each freshly chopped parsley & basil
  • freshly ground salt & pepper
  • olive oil spray
  • 4 x 180 gm blue eye (or any other 'steaky' fish) fillets
