Slow roasted pork chops


  • Preheat oven to 90°C. 
  • Heat a little oil in a heavy-bottomed roasting tray (or pan that can go into the oven) and seal the seasoned chops on both sides. 
  • Pour 1 cup wine over the top of the lamb, tightly cover with kitchen foil and then cover with a lid. Cook in the oven for 2 hours, turning and adding more wine if needed after about 1 hour.


  • 6 double pork chops, trimmed of all fat & sinew
  • olive oil
  • freshly ground salt & pepper
  • 1-2 cups dry white wine
