Falafel quenelles with crisp salad, glazed root vegies & hummus

Method

  • Place the beetroot, sugar and pinot noir with 300 ml water, seasonings, the cinnamon and quince in a heavy-bottomed pot and gently simmer until tender. Remove the beetroot and, when cool enough, remove the skin.
  • Then reduce the sauce, return the beetroot to the pot and stir to coat well.
  • Place the carrots, honey, Frangelica, nutmeg, a pinch of salt and 300 ml water in another pot and gently simmer until tender. Remove the carrots and reduce the liquid. Then return carrots to the pot and toss to coat well.
  • At the same time, combine the falafel mix with water, according to instructions on the packet. Form the mixture into quenelles (little football shapes) and fry in hot vegetable oil for 3-4 mins. Then drain well on kitchen paper towels.
  • To make the salad dressing, whisk the extra virgin olive oil and balsamic with the lemon verbena, thyme, garlic and seasonings.
  • Then toss the lettuce leaves, bay leaves, sheep sorrel and basil with dressing to taste. Set aside.
  • To serve, mound the salad on individual plates, top with the quenelles and arrange the beetroot, carrots and little spoonfuls of hummus around.

  • 12 baby beetroots
  • 1 tbsp raw sugar
  • 300 ml pinot noir
  • rock salt
  • freshly ground pepper
  • 1 cinnamon stick
  • ½ quince, diced
  • 1 kg baby carrots, peeled
  • 1 tbsp honey
  • 30 ml Frangelica
  • a pinch of ground nutmeg
  • any bought packet falafel mix
  • vegetable oil for frying
  • 100 ml extra virgin olive oil
  • 50 ml balsamic vinegar
  • a few lemon verbena leaves (optional)
  • a few thyme leaves
  • 1 garlic clove, finely chopped
  • 1 each radicchio, butter & iceberg lettuce, washed well
  • 2 fresh bay leaves
  • 100 gm sheep sorrel (optional)
  • 50 gm purple basil (or normal basil)
  • hummus (bought or homemade)
