Salmon cooked on a cedar plank

Method

  • Soak a cedar oven board in cold water for 1-2 hours with a weight on top.
  • When ready, preheat oven to 170°C (must not exceed this temperature) and heat the board in the oven for 10 mins.
  • Then lightly oil the board and place the salmon on top, skin side down. Sprinkle with the lemon-pepper seasoning and cook in the oven for 15-20 mins (not turning the fish).
  • When the salmon is almost ready, blanch the bok choy, wonga bok and snowpeas in plenty of boiling water. Drain well and toss with a little soy.
  • Arrange a bed of vegies on individual plates, top with the salmon and serve with a lemon wedge on the side.

  • bought lemon-pepper seasoning
  • leaves of 2-3 bok choy
  • ½ wonga bok, shredded
  • 24 snowpeas, topped & tailed
  • soy sauce
  • 1 lemon, cut into wedges
