Charlotte's Dog


  • Preheat overhead grill to the highest degree.
  • Season the potatoes, prick with a fork and wrap in lightly oiled kitchen foil. Then cook in the oven until tender. 
  • At the same time, bllanch the sausages in plenty of simmering water until firm to the touch. Drain well and separate.
  • Then heat a layer of oil in a non-stick pan and fry the sausages (or grill).
  • When almost ready, gently saute the onions until golden.
  • Cut the potatoes in half through the top, leaving a little attached at the bottom. Then top with caramelised onion, a sausage, chutney and cheese. Cook under the preheated overhead grill until cheese is golden and bubbling.


  • 4 medium potatoes, scrubbed well
  • freshly ground salt & pepper
  • vegetable oil 
  • 4 small sausages
  • 1 large onion, finely sliced
  • tomato chutney
  • grated tasty cheese
