Middle Eastern fruit compote with banana bread

Method

  • Preheat oven to 190°C. 
  • Cream the caster sugar and butter using a hand mixer until well combined. Then add two eggs, one at a time, beating between additions.
  • Combine the flours and add to the egg mixture. Mix well with a wooden spoon and transfer to a large bowl. Add the walnuts, 200 gm raisins, the bananas, apples, bicarb, nutmeg, cinnamon and boiling water. Mix well until well combined. 
  • Then lightly spray a springform cake (or bread) tin with oil and line the bottom with baking paper. Pour in the cake mixture, shake a little and cook in oven for about 1¼ hours until a skewer comes out clean.
  • While the cake is cooking, bring the sugar syrup, red wine, lemon zest, cinnamon stick and ginger to the boil and then boil for 3 mins. Add the dried pears, figs, remaining raisins, apricots and prunes. Mix well and bring back to the boil again. Then turn off the heat and leave to sit.
  • When the cake is ready, allow to cool a little and then cut into wedges. Serve with a little poaching juice poured over the top with the fruit and a dollop of cream on the side.
  • nb. To make sugar syrup, gently boil just over 1 cup each sugar and water.

  • 2 Granny Smith apples, peeled, cored & sliced
  • 1 tspn bicarb of soda
  • 2 tspn ground nutmeg
  • 1 tspn ground cinnamon
  • 2 cups boiling water
  • cooking oil spray baking paper
  • 2 cups sugar syrup (see below)
  • 2 cups red wine
  • grated rind of 1 lemon
  • 1 cinnamon stick
  • 50 gm ginger, peeled & finely sliced
  • 100 gm dried pears, halved
  • 100 gm dried figs
  • 125 gm dried apricots
  • 250 gm pitted prunes
  • double cream
