Little egg & ham 'pies'

Method

  • Preheat oven to 175°C.
  • Lightly spray a 12-hole muffin tray with oil and line each hole with a slice of ham. Then break an egg into each one and sprinkle with seasonings, a little cream, parmesan and parsley. 
  • Cook on the top shelf of the oven for 7-8 mins until the eggs are just set. Allow to cool for about 5 mins, turn out and serve hot or cold.

  • 12 thin slices ham
  • 12 large eggs
  • freshly ground salt & pepper
  • cream
  • freshly grated parmesan
  • freshly chopped parsley
