Algerian potato salad


  • Place the potatoes, oil, boiling water, chilli flakes, cardamom, harissa, ketchup, salt and garlic in a large heavy-bottomed pot. Mix well, cover and simmer for 25-30 mins. Taste for seasoning. 
  • Lightly dress the rocket with oil and seasonings.
  • Serve the potato salad with a mound of rocket on top.


  • 1.5 kg potatoes, peeled & cut into thick slices
  • 150 ml olive oil
  • 2 cups boiling water
  • a good pinch of chilli flakes
  • 1 tbsp cardamom pods, crushed
  • 1 heaped tspn harissa paste
  • 2 heaped tbsp tomato ketchup
  • a pinch of rock salt
  • 5 garlic cloves, finely sliced
  • a good handful of rocket leaves
