Spicy wings with peach BBQ sauce


  • Preheat oven to 200°C. 
  • Toss the wings in flour mixed with the paprika, spice mix and salt.
  • Place a rack over a baking tray filled with a little water. Then arrange the wings on top and cook in the oven for about 25 mins until crisp and golden.
  • To make the sauce, heat the oil in a heavy-bottomed pot and gently saute the ginger, onion and garlic. Turn the heat down, add the BBQ sauce, stock, jam and vinegar and mix well. Then add the peaches, stir and taste for seasoning. Gently simmer for about 20 mins, stirring now and again.
  • Spoon the sauce into a small bowl and place in the centre of a serving dish, with the wings arranged around.

  • 2 tspn smoked paprika (or normal paprika)
  • 4 heaped tspn Middle Eastern spice mix
  • 1 tspn sea salt
  • 2 tbsp olive oil
  • 1 heaped tspn freshly grated ginger 
  • ½ large onion, chopped 
  • 1 large garlic clove, crushed
  • 1½ cups BBQ sauce 
  • ¼ cup chicken stock
  • ½ cup peach jam
  • 1 tbsp red wine vinegar
  • 4 canned peach halves, chopped
