Waldorf salad with chicken

Method

  • To make the dressing, mix together the mayonnaise, sour cream, lemon juice and enough hot water to form a dressing consistency. Add the tarragon, mix well and taste for seasoning. 
  • In another bowl, toss the celery, apple, chicken, walnuts, ground pepper and dressing to taste.
  • To serve, place cos leaves in individual flat soup bowls and mound with the salad.

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • juice of ½ lemon
  • 1 tspn freshly chopped tarragon
  • 3 celery stalks, diced
  • 3 Granny Smith apples, peeled & cubed
  • 1-2 bought BBQ chicken breasts, skinned & diced
  • ½ cup toasted walnuts
  • freshly ground pepper
  • inner leaves of cos lettuce
