Spanish donuts


  • Mix together the sugar and cinnamon and set aside.
  • Then sieve the flour and salt into a large bowl. Make a well in the centre, pour in the boiling water and stir with a wooden spoon until just combined.
  • Heat oil in a large heavy-based pan.
  • Place the batter in a piping bag fitted with a 2 cm star nozzle. Then carefully pipe the dough, little by little, directly into the hot oil and fry until golden brown. (You could drop in teaspoonfuls, if you don't have a piping bag.) 
  • Drain and toss the donuts in the cinnamon and sugar mixture. 
  • Serve immediately with a chocolate sauce, if you like.


  • 100 gm caster sugar
  • ½ tspn ground cinnamon
  • 250 gm plain flour
  • a pinch of rock salt
  • 400 ml boiling water
  • vegetable oil for frying
