Risoni with spiced carrots


  • Preheat oven to 220°C.
  • Place the carrots in an oven tray and sprinkle with the spice mix and oil spray. Then cook in the oven until tender and well coloured, spraying with more oil if needed.
  • At the same time, cook the risoni in plenty of lightly salted, boiling water. Drain well.
  • While the risoni is cooking, place the chilli, garlic, oil, lemon juice, coriander and a little more spice mix in a bowl and whisk. Set aside.
  • When ready, toss the carrots and risoni with dressing to taste and serve as an accompaniment.


  • 2-3 medium carrots, sliced
  • Harissa spice mix

  • 1 packet risoni
  • freshly ground salt & pepper
  • 1 small red chilli, seeded & finely sliced
  • 1 garlic clove, crushed
  • 1/3 cup olive oil
  • juice of 1 lemon
  • 2-3 tbsp freshly chopped coriander
  • 3-4 tbsp toasted pinenuts
  • 3 tbsp raisins
