Chilli sweet potatoes


  • Preheat oven to 220°C.
  • Mix together the chillies, oil, thyme and salt.
  • Place the sweet potatoes on individual sheets of kitchen foil, generously cover with the oil mixture and massage into the potatoes. Spoon a bit more oil over the top and wrap up tightly. 
  • Then place the parcels in an oven tray and cook in the oven for about 45 mins until the sweet potato is soft when pierced with a small knife.
  • Serve as an accompaniment to any dish.


  • 2 small red chillies, seeded & finely chopped
  • ¼ cup olive oil
  • 1-2 tbsp thyme leaves
  • a pinch of rock salt
  • 2 medium sweet potatoes, peeled & thickly sliced (keeping in shape)
