Curly pasta with microwave tomato sauce


  • Cook the pasta in plenty of lightly salted, boiling water until al dente. Drain well.
  • At the same time, toss the onion, capsicum, tomatoes, balsamic and rosemary in a microwave container. Cover with plastic wrap and cook on high (at 100%) in the microwave for about 5 mins. Then drain in a colander or sieve and, if you like, blend. Taste for seasoning.
  • Toss the pasta with the sauce and serve with parmesan sprinkled on top.


  • 400 gm curly shell pasta
  • freshly ground salt & pepper
  • 1 onion, finely sliced
    1 red capsicum, cored, seeded & finely sliced
  • 3 cans diced tomatoes, drained a little
  • a splash of balsamic vinegar
  • 1 tspn finely chopped rosemary
  • freshly grated parmesan
