Tuscan bread & tomato salad


  • Toss the bread cubes with the red onion, tomatoes, cucumber and a decent amount of seasonings.
  • To make the dressing, whisk the oil with the red wine vinegar, capers and sugar.
  • Then toss the dressing with the salad and basil until well combined. Taste for seasoning and refrigerate for at least 2 hours.


  • 1 loaf 2-3 day-old sourdough, crusts removed & cubed
  • 1 red onion, cut into wedges
  • 1 punnet cherry tomatoes, halved
  • 1 small telegraph (continental) cucumber, cut into chunks & halved
  • sea salt & freshly ground pepper
  • 5 tbsp olive oil
  • 5 tbsp red wine vinegar
  • 2 tbsp capers, rinsed & drained
  • 1-2 tspn sugar
  • 12 fresh basil leaves, torn
