Corn & feta patties with smoked trout salad

Method

  • Mix together the corn, water, eggs, flour, feta, 1 tbsp chives and seasonings until well combined. Then form the mixture into patties, lightly flour and panfry in a thin layer of oil. Drain well on kitchen paper towels.
  • While the patties are cooking, combine the sour cream, mayonnaise, lemon juice and celery with the remaining chives. Add the trout and gently toss.
  • To serve, place a patty on individual plates and spoon a mound of the salad on top.

  • 2 cups corn kernels
  • ½ cup water
  • 2 eggs
  • 1 cup self-raising flour
  • ½ cup crumbled feta cheese
  • 2 tbsp snipped chives
  • freshly ground salt & pepper
  • olive oil
  • 2 tbsp sour cream
  • 4 tbsp mayonnaise
  • a squeeze of lemon juice
  • 1 celery stalk, finely diced
  • 1 small smoked trout, boned & flaked
