Anne's croutons

Method

  • Preheat oven to 130°C fan forced (150°C normal).
  • Layer the grated cheese and butter in a bowl. Microwave on high for 30 secs and then mix well with a wooden spoon.
  • Finely slice the baguette and spread a little pesto on each piece. Top with a little of the cheese mixture, leaving an edge.
  • Then place the croutons on a large baking sheet, in one layer, and cook in the oven for about 60 mins until crisp, dry and crunchy.
  • Store in an airtight container in the refrigerator for a few days (if they last that long!).

  • 70 gm grated butter
  • 1 small one-day old baguette
  • pesto
