Salmon & 3 veg, Asian style

Method

  • Place the salmon on a plate that will fit in a steamer.
  • Toss the carrot, celery and leek together and scatter over the top with the chilli and garlic.
  • Then spoon the soy, mirin and sake over the top, and cook in the steamer for about 5-6 mins.
  • Serve the salmon with all the juices and spring onion sprinkled over the top and steamed rice on the side.

Ingredients

  • 2 x 180 gm salmon steaks
  • ½ medium carrot, julienned
  • ½ celery stalk, julienned
  • ½ leek, julienned
  • ½ small red chilli, seeded & sliced
  • 1/4 garlic clove, finely sliced
  • 2 tbsp Japanese soy sauce
  • 2 tbsp mirin (Japanese rice wine)
  • 4 tbsp sake (Japanese rice spirit)
  • 1 spring (green) onion, finely sliced
