Mediterranean eggs


  • Heat the butter and 1 tbsp oil in a large non-stick pan and briefly toss the tomatoes.
  • At the same time, beat the eggs, basil, cream, seasonings and parmesan with a fork. Then add to the tomatoes and scramble. 
  • Grill or toast the bread and panfry the prosciutto in a little oil until crisp.
  • To serve, place a piece of bread on each plate and top with the scrambled eggs and then prosciutto. Garnish with a sprig of basil.

  • 1 punnet cherry tomatoes, quartered
  • 6 eggs
  • 6 basil leaves, finely sliced
  • a splash of cream
  • freshly ground salt & pepper
  • 1 tbsp freshly grated parmesan
  • 2 thick slices country-style bread
  • 3-4 slices of prosciutto
