Impossible pie


  • Preheat oven to 190°C.
  • Using a wooden spoon, mix together the flour, coconut, melted butter, sugar, vanilla, milk and eggs. Then pour into a greased gratin (or pudding) dish and cook in the oven for about 45 mins until golden brown and set.
  • Allow to cool a little and serve with a dollop of cream or ice cream and berries on top.
