Minced beef, baked beans & vegies


  • Heat the oil in a large heavy-bottomed pot and gently saute the onion, carrots and celery until slightly coloured. Add the mince and continue to simmer, breaking up with a wooden spoon.
  • Then add the parsley to the pot with 2½ cups stock, seasonings and Worcestershire. Mix well and simmer for about 30 mins, adding more stock if needed and stirring now and again. Then add the baked beans and Tabasco. Mix well and briefly cook to heat through. Taste for seasoning.
  • Serve with a small handful of grated cheese on top and good crusty bread on the side.

  • 2 tbsp freshly chopped parsley
  • 2-3 cups beef stock
  • freshly ground salt & pepper
  • a good splash of Worcestershire sauce
  • 425 gm can baked beans
  • a splash of Tabasco
  • grated tasty cheese
