Healthy breakfast risotto

Method

  • Soak the dried fruits in ½ cup orange juice overnight.
  • The next day, place the soaked fruits in a heavy-bottomed pot and gently bring to the boil. Add the rice and ¾ cup orange juice. Stir until the liquid is absorbed and then add the remaining orange juice. Continue to cook for about 12 mins until tender, regularly stirring and adding a little water if needed. 
  • Remove from the heat and add 1 tbsp yoghurt and the mint. Mix well and set aside for 5 mins.
  • To serve, top with the fruit and a dollop of yoghurt.

  • ½ cup mixed dried fruits (not glace)
  • 2 cups freshly squeezed orange juice
  • ½ cup Arborio rice
  • low fat plain yoghurt
  • 4-5 mint leaves, chopped
  • mixture of diced fresh fruit
