Sweet potato & goat's cheese galette


  • Preheat oven to 200°C fan forced (220°C normal).
  • Place the sweet potato on a bed of rock salt in a tray and cook in the oven for about 15-20 mins until almost tender. Remove and set aside to cool. Then brush off any salt.
  • Combine the olive oil, garlic and chilli in a small bowl.
  • Place a pastry sheet on a lightly oiled baking tray and smear with sour cream, leaving an edge. Then arrange the sweet potato on top, slightly overlapping. Put dollops of goat’s cheese on top, drizzle with the chilli oil and paint the pastry edges with the egg mixed with milk.
  • Cook in the oven for 10-15 mins until the pastry is golden brown and serve with a simple salad on the side.
  • nb.  Plain olive oil can be used instead of the chilli-garlic oil, if you prefer.
