Vegetable & ham loaf


  • Preheat oven to 200°C. 
  • Cut off the top of the bread and hollow out the centre of both pieces. Layer the capsicum and then the leek into the loaf. Season and top with the bocconcini, ham and zucchini.
  • Season again and layer with the artichokes and mushrooms. Sprinkle a little oil over and top with cheese.
  • Then put the lid on top, place on a roasting tray and cook in the oven for 15-20 mins.
  • Slice into wedges to serve.


  • 1 round loaf of bread
  • 2 red capsicums, roasted
  • 2 leeks, sliced & sautéed in olive oil
  • freshly ground salt & pepper
  • 2-3 bocconcini, sliced
  • a small handful of shaved ham
  • 2 zucchini, sautéed in oil
  • bottled artichoke hearts, drained
  • 8 button mushrooms, sliced & sautéed in olive oil
  • olive oil
  • grated tasty cheese
