Blue cheese & fresh fig tart


  • Preheat oven to 200°C. 
  • Place the figs on a baking dish, flesh side up and sprinkle a little balsamic on each one. Then cook in the oven for about 10 mins, turning every now and again.
  • At the same time, mix together the blue cheese, mascarpone, parsley and 1 egg. Set aside.
  • Cut the pastry into large rounds and lay on a baking sheet.
  • Mix together the remaining egg with the milk.
  • Then brush the pastry edges with the egg wash. Prick the centre with a fork and cook on the bottom shelf of the oven until golden. Allow the pastry to cool a little and then smear with the cheese mixture.
  • Arrange the figs on top and return to the oven to gently cook until the cheese has melted a little.


  • 6 fresh figs, halved
  • balsamic vinegar
  • 200 gm King Island blue, rind removed & crumbled
  • 200 gm mascarpone cheese
  • 2 tbsp freshly chopped parsley
  • 2 eggs
  • 1 puff pastry sheet
  • ¼ cup milk
