Thyme & chilli steak with oven fries


  • Preheat oven to 240°C fan forced (260°C normal).
  • Mash together the chillies, garlic, thyme, cumin and a spray of olive oil to make a paste. Then smear this over the steaks, spray with a little more oil and season.
  • Cut the potatoes into large fries and place on a lightly oiled oven tray. Generously spray with more oil, sprinkle with rock salt and cook in the oven for about 25-30 mins until golden and tender, turning after about 15 mins and spraying with a little more oil.
  • Place an even layer of rock salt in another oven tray and put it in the bottom shelf of the oven. After about 15 mins, when the salt begins to crackle, place the steaks on top and cook to the desired degree on the highest shelf of the oven (about 8-9 mins for medium-rare), turning once.
  • Serve with a simple green salad on the side.

  • 2 x 180 gm porterhouse steaks, trimmed of all fat & sinew

  • 2 medium-large potatoes, washed well, unpeeled
  • rock salt
