Roasted red onion, green bean & feta salad


  • Preheat oven to 190°C.
  • Place the onions in a roasting tray and toss with a little oil and seasonings. Then cook in the oven for about 12-15 mins until tender and coloured.
  • When almost ready, blanch the beans in lightly salted, boiling water until crisp-tender. Drain well.
  • Place the onions in the centre of individual plates, top with the feta and sprinkle with a little oil and balsamic. Then arrange a few beans on top and serve warm or at room temperature.


  • 2-3 red onions, cut in wedges

  • freshly ground salt & pepper
  • 24 small green beans, topped & tailed
  • feta cheese, crumbled
  • balsamic vinegar
