Bacon & cheese puff
Method
- Preheat oven to 200°C fan forced (220°C normal).
- Cook the bacon in a non-stick pan until crispy. Drain well.
- Mix the flour with the eggs in a large bowl until well combined using a wooden spoon. Add the milk and butter and whisk well.
- Then add the cooked bacon with any cooking juices, together with the cheese, a little salt, plenty of ground pepper and the spring onion. Mix well.
- Pour the batter into a lightly oiled gratin (or ovenproof dish) and cook in the oven for about 35 mins until puffed and golden.
- Serve with a simple green salad on the side.

- 8 streaky bacon rashers, sliced
- 150 gm plain flour
- 4 large eggs
- 200 ml milk
- 50 gm butter, melted
- 150 gm tasty cheese, grated
- sea salt & freshly ground pepper
- 4 spring (green) onions, chopped
- cooking oil spray
