Celebrating Autumn Cooking Class

Celebrate the change of seasons with a day in the Greekalicious kitchen, accompanied by cheffing goddess Maria Benardis. Maria will inform and inspire participants with a delicious repertoire of autumnal meals. At this time of year Greek cuisine turns to warming and healing dishes, as preparation begins for the colder months ahead. Stuffed meals are particularly popular, with the technique dating back to Ancient Greece. Learn how to stuff spring lamb in vine leaves with Greek cheeses, pine nuts and more, as well as whip up some impressive lamb dolmades. The signature salad of Crete will be a handy addition to your memory’s cookbook, as will the dessert of seasonal fruit poached in sweet Mavrodaphne wine from Patra.

Maria shares her culture and the food of her homeland with Sydneysiders at her Greekalicious cooking school in Bondi Junction, taking students on a journey as she describes the story and history of each dish cooked. Participation in the actual cooking is optional, and all students will receive recipes and a Greekalicious eco-friendly shopping bag to set them on their way. Maria focuses on creating simple dishes which are easy for budding cooks to recreate at home. She uses organic ingredients where possible, keeping in line with the style of Greek food she grew up with on the island of Psara. After the class, participants will be rewarded with a sit-down meal and glass of wine, mineral water, tea or coffee.
